Het fijne aan dit gerecht is dat je het volledig naar je eigen smaak kunt aanpassen, zonder dat het ingewikkeld wordt. In deze eenvoudige vegetarische versie laten we de bonen en extra ingredi\u00ebnten achterwege en focussen we op een paar basiselementen die samen een heerlijke combinatie vormen.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De warme, luchtige rijst vormt de basis van de bowl en wordt aangevuld met kruidige gebakken paprika en zoete ma\u00efs. De frisse toppings zoals tomaat, rode ui en romige avocado zorgen voor balans en maken het geheel licht en smaakvol. De yoghurtsaus met limoen maakt het helemaal af en geeft een frisse touch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dit gerecht is ideaal voor een snelle lunch, maar ook perfect als lichte avondmaaltijd. Bovendien is het makkelijk voor te bereiden en kun je restjes eenvoudig bewaren.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h3 class=\"wp-block-heading has-text-color has-link-color wp-elements-07fdc69298b8ffec96820fa1b9c4789d\" style=\"color:#78b7e8\"> Ingredi\u00ebnten<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">150 g rijst<br>1 paprika<br>1 avocado<br>150 g ma\u00efs (blik, uitgelekt)<br>100 g cherrytomaatjes<br>1 kleine rode ui<br>2 el olijfolie<br>1 tl paprikapoeder<br>Zout en peper<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Voor de saus:<\/strong><br>3 el yoghurt<br>1 el limoensap<\/p>\n\n\n\n\n\n<p class=\"has-text-color has-link-color wp-elements-1cc3d99f3870f1debfb7abe5951afd6b wp-block-paragraph\" style=\"color:#78b7e8\"><strong>Bereiding<\/strong> <\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Kook de rijst volgens de aanwijzingen op de verpakking in een pan met ruim water en een snufje zout. Laat de rijst daarna goed uitlekken en even staan zodat hij luchtig wordt en niet plakkerig aanvoelt.<\/li>\n\n\n\n<li>Terwijl de rijst kookt, kun je alvast alle groenten voorbereiden. Snijd de paprika in dunne reepjes, halveer de cherrytomaatjes, snijd de rode ui fijn en laat de ma\u00efs uitlekken. Snijd de avocado pas op het einde zodat deze mooi groen en vers blijft.<\/li>\n\n\n\n<li>Verhit een scheut olijfolie in een pan op middelhoog vuur. Voeg de paprika toe en bak deze rustig 4\u20135 minuten tot hij zachter wordt maar nog wel een lichte bite heeft. Roer af en toe zodat alles gelijkmatig gaart.<\/li>\n\n\n\n<li>Voeg daarna de ma\u00efs toe samen met het paprikapoeder, zout en peper. Bak dit nog 2\u20133 minuten mee zodat de smaken goed in elkaar trekken en de ma\u00efs een licht zoete, geroosterde smaak krijgt.<\/li>\n\n\n\n<li>Maak ondertussen de saus door de yoghurt te mengen met het limoensap in een kommetje. Roer goed door tot een gladde, frisse saus ontstaat. Proef eventueel en voeg een klein beetje zout toe voor extra smaak.<\/li>\n\n\n\n<li>Als de rijst klaar is, giet je deze af en laat je hem even staan zodat overtollig vocht verdampt. Hierdoor blijft de rijst luchtig en vormt hij een goede basis voor de bowl.<\/li>\n\n\n\n<li>Verdeel de warme rijst over kommen en schep daar de gebakken paprika en ma\u00efs bovenop. Voeg vervolgens de cherrytomaatjes en rode ui toe zodat er frisheid en kleur in het gerecht komt.<\/li>\n\n\n\n<li>Snijd de avocado in blokjes en verdeel deze als laatste over de bowl. Dit zorgt voor een romige textuur en maakt het geheel compleet.<\/li>\n\n\n\n<li>Lepel de yoghurtsaus over de burrito bowl of serveer deze apart zodat iedereen zelf kan bepalen hoeveel saus hij wil gebruiken.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading has-text-color has-link-color wp-elements-b08fc752d1fdfb383c492bd1b58f8b9d\" style=\"color:#78b7e8\"> Tips<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Voeg een beetje limoensap toe aan de avocado om verkleuren te voorkomen<\/li>\n\n\n\n<li>Wil je het iets pittiger?
